The other night I had a couple of friends over for dinner. I love having friends over. First of all, I love cooking for other people and have always loved entertaining. It’s fun to try out new recipes on your friends as well. So, I created a winter brussels sprouts salad to start the meal which went over really well!
Let me also tell you a little something about brussels sprouts and my family. If you love and cook brussels sprouts, you probably know that sometimes when you cook them they can be quite stinky. Just ask my three-year old, she will tell you. In fact, a couple of weeks ago, she and the hubs told me that if I wanted to make the yummy sprouts I would have to do it outside. So yes, I have been grilling my sprouts outside in the freezing cold these last few weeks and I will continue to so for the remainder of the winter! I don’t care, I love them!
Anyone else’s family give them a hard time about this or is it just mine?
However, when you eat them raw, they don’t have much of a distinct taste or smell so that’s why this salad was also perfect. I was able to prepare it inside my house. I sliced my sprouts for this salad. For those of you have never done this, cut off the stem at the bottom and then thinly slice the sprouts so you it looks similar to lettuce.
The best part was that there were leftovers for lunch the next day and since kale is a tougher green it held up great! This salad would be great as a starter or throw some chicken in if it you want a full meal. It’s very versatile so feel free to get creative with it. What’s even better is that with the kale and the sprouts you are packing a huge punch of yummy good for goodness. Brussels sprouts are loaded with fiber, antioxidants and high amounts of vitamin K and C. In addition, brussels sprouts carry Glucosinolates which have shown to fight against various cancers including breast, lung, bladder and prostate. Really, what are you waiting for!?!?
