Winter Break Week 2, Increasing Quality Runs and Yummy Eats!

We’re moving into the final days of 2013 and just like so many previous years this one flew by.  Everyone  told us that after you have a child, the days and months just pass by and I couldn’t agree more!

Not sure where time has gone but we are moving into a new year very soon!

One of best parts of this winter break has been longer runs in the morning without feeling rushed!  On Friday I ran just over 7 miles on the treadmill and then another 5 1/2 on Sunday!  Last week my total weekly mileage was over 21 miles! I haven’t had a week like that in MONTHS!

One of my goals for 2014 is to have more quality runs.  To me that means less of the quick 1-3 mile runs and more of the 4-6 mile runs.  Running is feeling really good for me these days!  On days I don’t run I plan to work on strength training… especially the lower body and core so that I continue to remain strong in my runs and hopefully stay away from injury!

There were some very yummy eats that we consumed this weekend!!  All thanks to Pinterest!  There was this Roasted Pepper Pesto with Kale that I served over quinoa.  The only change was using cashews instead of almonds.  The jarred roasted red peppers from Trader Joe’s was perfect for this recipe!

Then there was this Crock Pot Lentil Curry that we had for dinner last night over brown rice and more roasted broccoli!  I amount of lentils that the recipe made is a bit crazy.  It’s a good thing that the Hubs and I both loved it because we are going to be eating a lot of it this week! Lentils are so incredibly filling and are high in both fiber and protein!  The spicy kick was an added bonus not to mention that my house smelled yummy all day!


I did some baking this weekend too and modified this vegan and gluten free cookie bar recipe.  I cut the sugar even more and used coconut sugar instead of regular sugar and also used less agave.

Today, the hubs and I have another day date!  We’re taking a class together at the Y and then going to get massages! Can’t beat winter break!

Do you guys do big plans for New Years Eve?  We have a kid friendly party with friends tomorrow night and then a party on Wednesday!  To be perfectly honest, I don’t remember the last time we actually stayed up till midnight!  Do you wait for the clock to strike 12 or just celebrate the New Year the next day?

    Big plans for NYE? It depends on what others are doing, but for me, not this year. Last year we saw one of my fave bands (Coldplay) in concert for NYE, but this year, it’ll be quiet for me and I’ll probably be heading to bed early, but that’s okay. New Year’s I’ll head to brunch with some friends. It’s way too expensive to go out for NYE in general.

    Hooray for all of the great date days y’all have been able to enjoy lately!!
    We started hosting kid-friendly New Year’s Eve parties after having our first son (he’s 15) and still host every year. We stay up till around 2 that night (glad it’s only once a year!).
