Happy Wednesday! 1/2 way through the work week! Sara and I had our typical crazy busy Tuesday together! The heat was horrible though. We had days in July that we were wearing long sleeves and jackets and now the pools are closed it’s HOT! Not play outside HOT, but gross, sticky, unbearable hot! Here is to another WIAW!
I made this AMAZING paleo and sugar free banana bread on Sunday and it’s so good! I’ve passed the recipe on to so many of my friends. Sara loves banana bread but it’s usually loaded with sugar and oil! Not this one! It’s so filling and amazing! Topped with almond butter and chia seeds! It was the perfect breakfast before Sara and I hit up the Y for her Tuesday classes and my cross training! I was thankful for an indoor workout yesterday!
Post workout was the raw granola bars from last week! Filling and perfect. I was so hungry by 10am probably because I had breakfast at 6!
We eat lunch on the earlier side on Tuesday’s because we have to be back at 1 for swim lessons. I wasn’t super hungry and it was nearing 95 degrees by lunch time. A green smoothie with a great new protein powder called the Complete Protein and some homemade pesto hummus and veggies were perfect! The best part of my peppers were that I picked them in the morning from my garden!
You might want to check out more about this great vegan protein! There may be a give away in the coming weeks!
Afternoon snack time was outside today while Sara ran through the sprinkler! With all the pools closed, we are limited over here!
Thankfully, I knew I would not have to stand in front the grill and make dinner. I had this PB2 crock pot thai chicken going and I roasted a variety of veggies with a side of Freeka.
Not sure why, but I decided before dinner I should bake! Because that’s what most people do when it’s nearing 100 degrees outside. Right? So I baked these coconut date bars and everyone enjoyed them warm after dinner!
That was it! After dinner ended my night came to a close quickly! Busy Tuesday routine over here and it’s starting to look like Tuesday’s are going to be crock pot nights so feel free to share recipes if you have them!!
