WIAW: Summer Like Day and Our Afternoon Crisis

It’s May 1 and it’s going to be another beautiful day! I just got back from another sunrise run and boy am I feeling good!  Thanks to Jenn for hosting another week and a new month of WIAW.

Yesterday could not have been more amazing with the exception to our late afternoon crisis which I’ll tell you about later.  We had beautiful weather, I got out for a nice 5.3 mile run and we spent loads of time outside playing!  It was day two of my dairy free week and so far so good!  The friends over at So Delicious sent me some coupons to try out their products and I used there Coconut Milk in my smoothie along with frozen berries, kale, almond milk and chia seeds!  I also added some NuNaturals stevia drops too!  It was delicious!  What was even better is that I got to enjoy breakfast and my coffee outside!

After a quick trip to Trader Joe’s we headed to the park before art class!  Sara and I enjoyed our snacks outside on a picnic bench!

I can’t tell you how wonderful it felt to be running around and playing!  I busted out my flip-flops today too!  Bonus!

We met friends for lunch for a birthday celebration and grabbed some food and ate outside at the park across the street.  Here is a recycled picture of my salad because it’s the same one I had last week!

Playing in the park yesterday was amazing and while  I know that this weather is not sticking around it was a wonderful teaser.  What wasn’t wonderful was the temper tantrum that came when it was time to leave the park.  Oh goodness, I am so not ready for that again.

Sara played hard so she actually took a nap and I read and relaxed outside!  What a treat! I enjoyed a new Trader Joe’s find and some of this amazing PB Kabocha Spread I made last night.

We were getting ready to leave for gymnastics when our afternoon crisis occurred!  We are having electrical issues in our bathroom so the Hubs and I have been getting ready in the downstairs bathroom!  The Hubs had his razor on the sink and Sara decided it might be a good idea to try to shave!  OY bad idea!!  No gymnastics and our bathroom looked like a crime scene!  Thankfully, Sara is a champ and crisis ended within the hour!  No pictures needed from that event!

For dinner, I made fish tacos only we don’t really use the tortilla shells so I guess we could call them fish taco bowls.  I also put together this amazing quinoa salad with mango, avocado and black beams! I’ll post the recipes soon!  To add crunch to the taco bowls I roasted some broccoli slaw from Trader Joe’s.  WayFare also sent me some coupons to help me with my dairy free week and I used their we can’t say it’s sour cream on top of the taco bowls!  Yummy!  Dinner ended with some grilled pineapple!

Sara enjoyed a popsicle and as you can see was much better after our late afternoon crisis!

What a bonus that we go to enjoy all three meals and snacks outside today!!!   Did you get outside and get to enjoy the weather as well?

      We love taco bowls– little mess– easy clean up and really tasty! I’ve never been a fan of taco “shells” or wraps!

    You reminded me to get new sandals. And oh the tantrums for leaving the park… Its still new to me, as my tot has only starting doing that for a couple months now. I try to lure her out with the promise of chasing pigeons!

      We finished it yesterday- thankfully I have a some cooked squash ready to go and I am making another batch today!

  7. What is it about wanting to try out a razor when we’re kids?!? I remember being intrigued by them, too. Eek.

    And yes, I’m definitely enjoying this weather. I just wish it would stick around!!
