I got these bars last week in the mail from Core Foods.
CORE Meals are FRESH portable food. They’re as convenient as packaged products, but they’re not candy, they’re food. Each pack is 4 hours of stable, balanced energy. Grab instead of breakfast when you’re in a rush, or after a workout for a solid recovery.
So, I nibbled on Raw Cashew Cacao bar before my morning run. I probably had about 1/3 of the bar. It was really tasty, and I was sure to get some big gulps of water down in the process. I got of my treadmill and cranked out 5 miles with an 8:10 pace! I felt amazing! After a cool down I sat down and enjoyed the rest of the bar!! It was really satisfying!! I grabbed a quick apple just before 10:00 because I was training my first client at my house this morning and I knew I’d get hungry if I didn’t eat something before hand. I got more pink lady apples this week!!
For lunch, I had this amazing roasted corn and black bean soup that Angela over at Happy Fit Mama posted about last week. I made some adjustments to it. I used an entire zucchini, 1/3 cup of quinoa (uncooked) and used 4 cups of veggie stock. I also let the soup simmer a bit longer so that the quinoa cooked. Seriously, amazing soup that I have been enjoying for lunch this week. I threw a dollop of plain greek yogurt on top for some added creaminess.
After lunch I had about 1/3 of this bar left. It was another yummy snack from my Healthy Surprise Box.
Around 3ish before we headed out the door for gymnastics, I munched on some of this yummy Earth Balance popcorn while I was writing up a post about their awesome snacks (hint hint… giveaway coming soon of awesome Earth Balance snacks)
Dinner was totally on the fly and it was amazing! I love when that happens! I threw a bunch of things together and came up balsamic chicken, roasted kabocha squash (I drizzled balsamic glaze on during the final 2 minutes of roasting time) and some green beans. I’ll post the recipe for the chicken soon! The dinner left me full for the remainder of the night. Note, it probably had to do with the fact that I had a second, maybe even a third helping of the roasted squash. Seriously, love that stuff!!
