Happy Wednesday! I remember thinking that January would be the slow month. Last week I told a friend how fast it was moving. This week not so much! If I had a dollar for every time someone made a comment like, “oh so you are still pregnant,” I could buy a whole lot of ice cream! The days are starting to go quite slowly even though this week has been quite busy at work. Let’s get to the eats!
I splurged last week and bought this almond milk based vegan cheese at Whole Foods when it was on sale. It spreads like cream cheese and is really yummy. I put it on a couple of slices of flax bread with a bunch of tomatoes! It was the perfect pre-workout breakfast!
I had a great workout at the gym on the elliptical and then spent some time on the weight machines!
Where did my feet go!??!
Meetings were all over the place this morning and I had a little time to grab lunch at a soup place nearby. I had a free pick two combo that was just “burning” a hole in my wallet! I finally gave in to my grilled cheese and tomato soup craving…
This was actually a roasted tomato basil soup paired with a half of grilled cheese, pesto and tomato sandwich. It was SO good and hit the spot! Clearly I had a thing yesterday for tomatoes!! Although, I love tomatoes all the time!!
I spent part of the afternoon in meetings and the other part at my office trying to tie up loose ends and finish up some projects. Since my lunch was rather filling I wasn’t starving at dinner time!
More soup for me.. this time lentil… and of course a side of Dijon sautéed green beans!
Then this happened….
My friends over at Peanut Butter & Co. sent me another batch of their yummy jars of peanut butter and well, let’s just say there was an incident with a spoon and White Chocolate Wonderful… gets me every time… so we can just call this dessert!
