Good morning everyone
Special thanks to Jenn over at Peas and Crayons for hosting another week of WIAW
My day started at 5:30 with this awesome speedy run! It left me feeling high all morning! After the run, I did my Tank Top Tabata! My arms were burning!
I prepped breakfast the night before and dug right into my overnight oats. Of course, I topped with my the homemade chia peanut butter because this stuff is seriously addicting! I also enjoyed my coffee, which consisted of almond milk and coffee.
After breakfast we decided to bake some cookies. Part of the reason was that I need to finish up this peanut butter without actually sitting with the jar by myself and consuming the entire thing! We made these Chia Peanut Butter Cookies, but I made some modifications.
Ingredients:
- 1 1/2 cups rolled oats
- 1 tsp baking powder
- 1/2 cup spelt flour
all purpose or gluten-free flour - 1 1/2 tbsp chia seeds
- 1/4 cup coconut oil
butter, room temperature 1/2 cup brown sugar- 1/4 cup of brown sugar
- 1/4 cup of coconut sugar
- 3/4 cup peanut butter ( I used my homemade peanut butter)
- 2 eggs
- 1 tsp vanilla
- 1/2 cup dark or semisweet chocolate chunks or chip
The results….
Breakfast really kept me full and around 11, after Sara and I had her story hour at the library I had an apple.
I had a lunch work meeting which I brought Sara too, so I didn’t really get to photograph lunch. Actually, I didn’t really eat much at the meeting. They had deli trays, which isn’t really my thing. There were some veggies and salads which I munched on but it didn’t do the trick. When we got home around 2:00 I chowed on this leftover bowl of Kabocha Squash tots from the night before! AMAZING!
Before we ran off to gymnastics class I prepped this for dinner! I found it on Pinterest last week!
Hummus chicken was a HUGE hit! The best part was that the veggies were part of the recipe and all done in one dish! I added some quinoa on the side. Awesome pinned dinner that I will for sure be making again!

So good and the best part is that you really can’t feel so guilty after eating them! The recipe makeover was a huge success.

Would like to hear about the hummus chicken.
I made some butternut squash shepherd’s pie that I found on pinterest. And some cauliflower rice risotto. Both so good!

The chia peanut butter looks amazing! I’ve always been hesitant to try making my own pb but now I may have to just do it!

The sea salt has some an amazing flavor!!! I highly suggest using unsalted nuts and then adding in some sea salt– perfect taste and I could still taste them in the cookies!
I am so envious you are a morning runner! I have such a hard time doing this before work.

I’ve been wanting to make those cookies and I love your modifications! I also have been addicted to making nutbutters lately, but I need to try your recipe and add chia seeds. Tomorrow, I’m posting my Snickerdoodle Cashew Butter…..believe me it’s to die for! Happy WIAW!

Yum! Chia Peanut Butter sounds delish! I tried to make a “Nutzo” type butter the other day but it turned out a little dry. Oh well, I never mind trying and sampling nut butters
