Wow, yesterday was crazy. I knew it was going to be! It seems that Tuesday’s are really my crazy days. Thankfully, I had all my meals planned out. Actually, I usually have my daily meals planned out. I’m always thinking about food. Are you?
Thanks to Jenn over at Peas and Crayons for hosting. This month, in honor of Valentine’s day the focus is,


We were out of the house and off and running before 9! I prepped dinner before I left so I had one less thing to worry about!
Snack was on the go and Sara and I snacked on some of these before we hit up the library for storytime.
We both had 12:00 appointments to get our haircuts. Getting my haircut used to be my ME time. However, I still love where I go in the city and can’t give my girl up. So, for the last 6 months Sara and I have been getting our haircuts together. I packed lunch for us to have while we were were there.
I tried the Chi Bar which is one of the amazing snacks that came in my Healthy Surprise Box. More on that TOMORROW! (Hint, hint, come back for an awesome giveaway!)
The Chi bar held me over until we got home late in the afternoon where I dove into a yummy bowl of my favorite Kabocha squash tots!
While at home, Sara and I worked on her Valentine’s for her party tomorrow at school. I was just happy I didn’t have to think about dinner before we headed back out for gymnastics!
When we got home, dinner was all ready! Seriously I LOVE my crock pot!
I threw together my version of crock pot chicken taco bowls with quinoa and everyone was happy! I’ll get you guys the recipe soon!
After dinner, I headed back out for a work meeting! Phew, seriously an exhausting day!
I guess I kind of failed on the extra veggies today! I will do better tomorrow when I am not running like a crazy person!
