Weekend Business, Food Prepping and Trilogy Butter Winner

This past weekend was so busy and so much fun!  We really took advantage of the amazing weather!

On Saturday, I got out for 7.25 miles!  That is the longest I have run since my injury and it felt good!  Not perfect but good!  After my run and training a client it was time for fun!

Image copyWe did a festival during the day and then the Hubs and I went to see Chicago at night!  Good times and the concert was amazing!  We had spectacular weather, great food and awesome drinks!  I discovered vodka mixed with Kombucha makes an amazing and tasty drink!  Who knew?!?

Sunday, I got a great workout done in my basement.  Running and Tabata combined made for a great 35 minute sweatfest!

Sara and I headed over to a new farmers market and picked up some staples for the week while the Hubs prepped for school!  I’m so excited that farmers markets are starting to carry apples!

ImageAfter the market we came home I did some meal prep for lunch and dinner!  We spent the afternoon at the pool and returned home for more food prep!

Quite honestly, yesterday was perfect!  There was time for cooking, playing, and working out!  Can’t get much better then that!  Oh, and I had Sara in the kitchen helping me!

I made my own almond meal this weekend from almond milk and it was so easy!  The almond meal then turned into these amazing raw cookie dough bites!

Dinner was in the crock pot and I experimented and adjusted this recipe to create Thai Peanut Lettuce Wraps! They turned out amazing I’ll share my recipe adjustments this week!


I’m going to be cooking out the crock pot at least once a week and probably twice a week in the coming months!  I’m thankful to Pinterest for all the amazing recipes out there!  I don’t know what we did before Pinterest!  Do you find recipes off of Pinterest?

  4. Who knew?! I would never think to mix kombucha with booze! Looks like a great concert. I still need to make my own almond milk. I saw I’m going to and then the weekends are so busy they fly by!
