I have to share this story with all of you because it’s simply so amazing!
The Hubs RARELY ever goes grocery shopping! Yesterday, he mentioned to me that we were out of a few of our Trader Joe’s staples and that he would pick them up with Sara after she was done with camp! Perfect, he was saving me a trip!
His mission was to pick up a handful of groceries! Well, here is what happened! He got up to pay for his goods and realized that he had left his wallet in his gym bag. He explained the situation to the cashier who was amazing and called over the manager. The manager just told him that he could go home with the groceries and come back and pay. The Hubs thought this in itself was so nice and thanked him profusely. He ran home (10-15 minute drive from our house) and ran in to the house to grab the wallet. Sara had passed out for a short snooze during this time in the car as well.
The turn around time was fast and he got back to TJ’s very quickly and went to the customer service department and explained who he was and the situation. The manager and customer service department told him just to forget about it and that the groceries were on the house! What?! How amazing! The total in goods were just under $20!
When does that EVER happen??! How incredible is Trader Joe’s?? I probably told that story to everyone I talked to yesterday and had to share it with you!
Ok now onto the recipe!
Last week I stocked up bananas at Costco and once they got nice and brown I sliced them up and put them in the freezer!
I use frozen banana slices in my smoothies daily! Once they are frozen they add a whole lot of extra creaminess to the smoothie!
Then, after the banana slices came these!
I prepped a bag of strawberries for the freezer for future frozen treats!
Last week I put the frozen bananas and strawberries into the Vitamix and got this!
Yummy creamy strawberry banana “ice cream.” Two ingredients and whole lot of taste!
Then I perfected it a little bit more and got this!
- 1 small banana sliced and then frozen
- 1 cup of strawberries frozen
- 1 Tablespoon of coconut flour (optional)
- ¼ Teaspoon of Xanthan Gum (optional but makes the texture creamier)
- Put all ingredients into your Vitamix or food processor.
- Process until the ingredients are blended and creamy
