Tequila and Lime Shrimp or Chicken

So while my absolute favorite summer drink is tequila, fresh lime and a dash of sea salt, I don’t think it’s quite possible for me to consume all of this!!!20140608-071229-25949642.jpg

I was playing around with some spices, tequila and lime and came up with an awesome marinade that just screams SUMMER!  I’ve tried it on both shrimp and chicken so you can do it on either or BOTH!20140608-071230-25950857.jpg20140617-194213-70933053.jpg


Tequila and Lime Shrimp or Chicken

An perfect combo of citrus and spice for your chicken or fish! This is a MUST for your next summer BBQ!
  • 1 pound of chicken or shrimp ( I haven't done it on other fish yet but I am sure it would be awesome!)
  • 1 shot of tequila
  • Zest of one lime
  • Juice of one lime
  • 1 teaspoon of cumin
  • ⅓- 1/2 cup of fresh cilantro (depending on how much you like the taste of cilantro)
  • 1 clove of garlic
  • ¼ cup of olive oil
  1. Place all marinade ingredients in your food process, high speed blender or mini prep
  2. Blend for about 15-20 seconds
  3. Pour over chicken, shrimp or other fish and let marinade for at least an hour. I try to aim for 3-5 hours
  4. Pre-heat your grill to medium high heat and cook your chicken or fish according to directions
  5. Serve immediately with some salsa or guacamole or anything else that you are in the mood for!!

  3. I made something similar a few weeks ago with shrimp. I had to go to the liquor store at 10 am on a Monday morning to get the tequila-you would be surprised at the characters you see at that time!
