Summer? What Summer?! Weekend happenings, Injury Update and Kitchen Playtime!

Well, since the Hubs and I have returned from Cabo the weather here in Chicago hasn’t been ideal!  This weekend we didn’t even hit the 70’s.  In fact on both Saturday and Sunday when I set out to run, the temps were holding around the mid 50’s.  Is is July or early May?

I had two decent runs this weekend!  6 miles on Saturday and 3 1/2 on Sunday!  Not to mention I did 3.2 on Friday!  3 days in a row of running with little pain makes me very happy!  I’m pacing out around 7:45 which is about 15 seconds slower then normal but I’ll take it!  I was all signed up to the run the ZOOMA 1/2 Marathon on August 10th but I will be dropping down to the 10k!  It’s not safe to even attempt a 1/2 marathon at this point!

I do feel as though I am healing and working my way through this minor setback!  I’m still in PT weekly and while I kind of slacked on the exercises while I was away, I am doing my best to stay on top of it!  I don’t want things getting worse!

Despite fall like temps we had a fun and productive weekend.  I did lots of grocery shopping and stocked up on staples at the farmers market, Whole Foods, Costco and Trader Joes!

Whole Foods had a BOGO special from 12-5 on Saturday for their So Delicious Ice Cream!  It’s so good and with a deal like that how could I not stock up!?  Saturday night, I found myself with a spoon in the Almond Milk Cookies and Cream before we sat down to watch Dexter!

Talk about an exciting Saturday night!   Hubs and I finished up season 3 and started season 4 last night!  Gosh, we live exciting lives!

I cooked dinner both Saturday and Sunday evening.  I typically take Friday/Saturday off but since I haven’t cooked in a while, I was up for it!  Grilling this chicken, which a family favorite on Saturday with loads of veggies and I also experimented and made a tomato basil cauliflower rice dish!  Sunday was bison burgers all around, grilled veggies and sweet potatoes and we finished it off with chocolate avocado pudding!  Sara certainly enjoyed!

Lots of new recipes were created in the kitchen this weekend and I will be sure to get them your way soon!  I also made this hummus for the next few days!  We seem to be going through hummus very quickly and I love experimenting and creating new ways to enjoy it!

It’s back to work for me today!  It was great having a vacation but I’m looking forward to being back and seeing everyone!  Hard to believe we are approaching August!  Summer is winding down, Back to School commercials and ads are all over the place and the Hubs got his official back to school letter from his superintendent over the weekend.  Yes my friends, summer is almost over but there is still plenty of fun to be had!

Don’t forget about the HIND Clothing Giveaway going on in case you missed it Saturday!

What did you do this weekend?  Has summer moved too quickly for you?  Do you take the weekend off from cooking typically or do you take nights off during the week?

When it comes to workout gear, there are things I’ll be frugal on and some that I won’t. But I like what I like and so, sometimes I don’t feel like going on a witch hunt for a sports bra! 🙂

As for this weekend, it wasn’t much fun. On antibiotics and praying that I don’t need a root canal. Yuck! As for summer, have we had one? It has rained do much here that it doesn’t feel any different. Not many beach days. But I did cook last night, chicken and sweet potatoes with sugar snap peas. Yummy!

  5. My husband always cooks, but I help prep. He is a great cook. A lot of times during the week on one of the days that the kids are especially busy we’ll pop in a frozen pizza. We love to grill though too and eat a lot of salads and grilled chicken through the week. It’s been up and down with hot and cool weather here too. However, the humidity has been high no matter what. We’re supposed to be back near 80 today though. – I’m in Maine 🙂

  9. Welcome back! At least the cool temps are nice for running! Can’t wait for the Smoked Paprika Hummus recipe. YUM! For the Hind giveaway, I’m mostly a love a great deal kinda gal, but there are some things that are worth splurging, especially if it’s quality gear that will last a long time. I often splurge on some of my outdoor gear/apparel for backpacking trips.
