Well, since the Hubs and I have returned from Cabo the weather here in Chicago hasn’t been ideal! This weekend we didn’t even hit the 70’s. In fact on both Saturday and Sunday when I set out to run, the temps were holding around the mid 50’s. Is is July or early May?
I had two decent runs this weekend! 6 miles on Saturday and 3 1/2 on Sunday! Not to mention I did 3.2 on Friday! 3 days in a row of running with little pain makes me very happy! I’m pacing out around 7:45 which is about 15 seconds slower then normal but I’ll take it! I was all signed up to the run the ZOOMA 1/2 Marathon on August 10th but I will be dropping down to the 10k! It’s not safe to even attempt a 1/2 marathon at this point!
I do feel as though I am healing and working my way through this minor setback! I’m still in PT weekly and while I kind of slacked on the exercises while I was away, I am doing my best to stay on top of it! I don’t want things getting worse!
Despite fall like temps we had a fun and productive weekend. I did lots of grocery shopping and stocked up on staples at the farmers market, Whole Foods, Costco and Trader Joes!
Whole Foods had a BOGO special from 12-5 on Saturday for their So Delicious Ice Cream! It’s so good and with a deal like that how could I not stock up!? Saturday night, I found myself with a spoon in the Almond Milk Cookies and Cream before we sat down to watch Dexter!
Talk about an exciting Saturday night! Hubs and I finished up season 3 and started season 4 last night! Gosh, we live exciting lives!
I cooked dinner both Saturday and Sunday evening. I typically take Friday/Saturday off but since I haven’t cooked in a while, I was up for it! Grilling this chicken, which a family favorite on Saturday with loads of veggies and I also experimented and made a tomato basil cauliflower rice dish! Sunday was bison burgers all around, grilled veggies and sweet potatoes and we finished it off with chocolate avocado pudding! Sara certainly enjoyed!
Lots of new recipes were created in the kitchen this weekend and I will be sure to get them your way soon! I also made this hummus for the next few days! We seem to be going through hummus very quickly and I love experimenting and creating new ways to enjoy it!
It’s back to work for me today! It was great having a vacation but I’m looking forward to being back and seeing everyone! Hard to believe we are approaching August! Summer is winding down, Back to School commercials and ads are all over the place and the Hubs got his official back to school letter from his superintendent over the weekend. Yes my friends, summer is almost over but there is still plenty of fun to be had!
