Peanut Butter Chocolate Chip Cookie Dough Balls + Boot Camp Sign Up!

I was playing in my kitchen on Sunday which is something I like to do!  During the week, I never really get the chance.  I’ve been doing some experimenting with coconut flour!  Do you guys use it?  Coconut flour is a great alternative to wheat and other grain flours.  It’s high in protein and fiber and of course is gluten free!  It’s important to know coconut flour has a very different consistency and can’t be replaced at 1:1 ratio when baking or cooking with it.  Want more info on cooking and baking with coconut flour?  Check out this site.

Peanut Butter Chocolate Chip Cookie Dough Balls

Ingredients

  • 1T of Peanut Butter ( I used Better 'n Peanut Butter for a lower calorie option)
  • 3T of Milk divided ( I used unsweetened Almond Milk)
  • 2 T of Coconut Flour
  • 1T of Coconut Sugar or other sweeter
  • 1 T of mini chocolate chips (Optional)

Instructions

  1. Microwave 1T of peanut butter with 1T of milk for about 15-20 seconds and give it a stir.
  2. Add in coconut flour. Add remaining almond milk, one tablespoon at a time.
  3. Add in sugar and then chocolate chips.
  4. Roll into balls and eat immediately or freeze for 30-60 minutes
  5. Enjoy!

I’ve also got some BIG news!!  As you all know I trained my first client this week.  Well, I’ve picked up another one!  I’m having a blast and loving every second.  Additionally, I decided to go for my Tabata Boot Camp certification!  There is a conference coming to town here in a few weeks and I couldn’t let the opportunity pass me by.  I’m a huge fan of Tabata and HIIT and know that I will love every minute of this course.  You  can check out more information here!   Anyways, I so excited and promise to bring back lots of info to share with all of you!  I’d love to do a boot camp in my neighboorhood this summer!  I live walking distance from a great park with a running track!  It would be an awesome place for an early morning sweatfest!

  1. These sound great! Anything with pb and chocolate chips gets my attention. I really like cooking with coconut flour, but you’re right it’s much different than cooking with regular flour.

  4. I have just recently tried coconut flour . . . . and I LOVE it. I make a cookie dough crumble with it all the time for a snack. It’s so tasty–I can’t believe I didn’t try it earlier.

    I love the whole concept of Tabata and already do them quite often! 4 minutes a round– it goes so quickly, plus I love the intensity of the sessions
