One of my Obsessions

Ok, so I might a little late in the blogging world to comment on my obsession with pumpkin, but I need to share.  One might even consider me a pumpkin hoarder. I’m not ashamed.  I’m sharing some of my favorite pumpkin recipes that I have found and have made this year.  Feel free to check out my Pinterest boards for more

Breakfast:  Microwave Pumpkin Muffin

Snack: Pumpkin Granola

Chili:  Pumpkin Quinoa Chili

Dessert:  So many but check out this link on Chocolate covered Katie with all things pumpkin

After my morning workouts, I like to start things off with pumpkin.  My newest trick, I put pure pumpkin in my coffee.  Let me tell you, it’s saved me a ton of $$$.

Spoonful of pumpkin mixed in with almond milk

I am no longer finding the need to head into Starbucks for a pumpkin spice latte.  It’s so easy.  I just take my mug and pour in about 1/3 of the way my almond milk (any milk is fine.)  I heat it up in my microwave for about 30 seconds and then stir in a spoonful of pure pumpkin.  It really dissolves and it doesn’t change the consistency of the coffee.  After that, I use my favorite milk frother, (totally optional) and finally add the coffee.  To finish it off, a dash of cinnamon or pumpkin pie spice!  I’m telling you I don’t even miss Starbucks.

I just had my first pumpkin spice latte ever at Starbucks. Disappointing, and too many calories. Then I remembered you had your own recipe. I’m going to have to try your version for sure.

Wow! I made this yesterday (twice) and it is fantastic. My only variation: I didn’t have any coffee so I made a Chai tea and added some of that. It was fantastic!! Thanks for the great recipes!
