You know what I love… Maternity leave. Seriously, it’s wonderful. Don’t get me wrong, I love my job and I have been keeping in touch with everyone from work and staying on top of a projects and other things as well so it’s not as though I have dropped off the face of the earth but I do love being at home with my little man who turned “2 weeks” old yesterday! Time is flying by!!
When I had Sara, the Hubs and I had the time off together. Sara was born on his last day of school so we did everything together that summer and we spent lots of time outside. This time around is different but I really have no complaints. B and I get out when we can. We’ve run errands every day this week and have spent time at home too. I’m enjoying the balance! I think he likes it too!
You what else I love… coffee!! I gave it up for the pregnancy with no issue because the thought of made me ill but goodbye all food aversions and hello morning cup of coffee.
I shouldn’t complain about being sleep deprived. We are doing OK over here so far. I’m getting about two 3-4 hour stretches at night but I still love my coffee first thing in the morning!
Typically, I use my homemade almond milk for my coffee but I decided to play around with coconut milk. Really, I was trying to get the hubs off his grocery store creamer. I’ve been trying for a while. He was into the SO Delicious coconut milk creamer but Whole Foods isn’t carrying it anymore so I needed to find something that works…. and I did!!!
- 1 can of coconut milk.
- 2 medjool dates pitted (if you want a sweeter creamer feel free to add more)
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla
- "Place all ingredients in a high speed blender and blend until creamy.
- Store in glass jar in the fridge for up to one week.
- Remember to shake the jar each time before you use your creamer!
Note that I use this brand of coconut milk because I have found it to be the most clean with no added ingredients!
Also, if you don’t have dates you can try adding honey or other natural sweeter. Play around with the flavor. If you try it and like it, I would love to hear from you!
Have you guys heard about the buzz with Starbucks and the new addition of coconut milk. I have to admit, as someone who has not had a cup of their coffee since the end of April I was so excited. That was until I read this article. I posted it on my Facebook page and it brought a lot of feedback. While, it’s great they are adding another non dairy, soy free alternative, I just wish it was a cleaner milk! What do you guys think??
