Yesterday morning I seriously debated whether or not to snooze with the Hubs or get my butt up and go for a run! I was so glad that I decided to get out of bed and get moving. I told myself 2 miles and I’d be happy! According to my Jawbone UP bracelet I moved over 9 miles on both Saturday and Sunday and Monday is usually a rest day for me but I knew I would be sitting most of the day!
Not only did I see a spectacular sunrise but I had a great 3 1/2 mile run and got my fill of core work, pushups and burpees! It was a great way to start the day and I am so glad I opted against sleeping in!
I told you last week that I created a fantastic little treat/snack out of the leftover almond pulp from my almond milk.
I’ve been making my own almond milk ever since I bought my Vitamix and it’s so much better than then store-bought stuff. For one there are no additives in my almond milk and I love customizing and changing it up. I’ve tried adding pure maple syrup, cinnamon, vanilla, dates and honey. It’s so creamy and so delicious. Cinnamon is my favorite addition. What’s left after a batch of almond milk. Well, it’s a about a cup of almond pulp. What to do with the almond pulp? It tried some cookies last week that were just OK. Then I experimented and low and behold I created these yummy frozen almond pulp protein bars.
- Almond Pulp from one batch of almond milk (approximately 1 cup)
- ½ cup of shredded coconut
- ½ cup of almond butter
- ⅓ cup of honey or agave
- 1 T of unsweetened cocoa powder
- Optional: I scoop of protein powder. I used chocolate
- Optional: 2 Tablespoons of ground chia or flax
- Mix all the ingredients together in a large mixing bowl
- Place batter into a 8x8 glass baking dish.
- Place in the freezer until firm.
- Cut into squares
