Homemade Almond Milk, Day Date and the Celebratory Weekend BEGINS!

I failed to mention yesterday that effective 3:40pm on Wednesday afternoon the Hubs officially entered summer vacation which means wonderful glorious things for us over here!  Life just gets a bit easier!  Stress decreases as the outside temperature rises and for the next 10 weeks or so life is wonderful and a whole lot of FUN!  My schedule though is actually a bit busier but we have some wonderful trips and getaways planned so there will be plenty of fun as well!

Thursday night I prepped everything to make my own almond milk!  I’ve been wanting to do it for awhile and now that I have a Vitamix there is no excuse!  It was SO easy!


Soaked one cup of almonds overnight and then added 4 cups of filtered water with the  almonds and put in two dates and 1/4 teaspoon of cinnamon for some added sweetness!

The result was pure heaven!  Way better then what I would typically buy!  I used the almond pulp for my smoothie after my run!  I strained the milk with a cheese cloth but I am thinking of buying a nut milk bag.  Does anyone use one or have a recommendation?

Had a great short run in my new shoes and then got ready for the day!  My mom picked up Sara for a special day and the Hubs and I had a date day!

We headed to a 10:40am show of Iron Man 3!  Have you seen it?  It was great and so much fun!  I love super hero movies and I am beyond excited about Man of Steel coming out next week!  Superman is my ABSOLUTE favorite!  I had a MAJOR crush on Christopher Reeve as a child!

Anyways this is what the theater looked like when we walked in!

A little dark but just us!  A few other people arrived a couple of minutes later.  Less then 10 people total!

The Hubs and I were thrilled by the amount of AWESOME previews!  We both love them!  My favorite one was by far this:

Catching Fire!  Oh so excited!  It was the first time I’ve seen a preview for this movie!  Hello Katniss!!  Can’t wait for the next chapter!  My favorite of the three Hunger Games books was Catching Fire!

After the movie we headed out for a great lunch and concluded the day with some shopping and I treated myself to a much needed manicure!

Day dates are great!  Sara came home happy and exhausted from a fun day with grandma which meant early to bed in prep for what is sure to be a fun filled birthday weekend!

Today I’m off for a long run and then I have one client before we have some family stopping by for brunch and friends birthday in the afternoon.  Tomorrow morning is brunch because it’s my mom’s birthday and then the birthday party madness begins!

It’s sure to be an awesome weekend for this little lady!

    Hi Laura, Wow! This is an awesome recipe. And it looks so easy to make! I don’t drink cow’s milk and always look for alternatives in a form of nut milk. At times I find them overpriced and funky tasting. This recipe of yours is a life changer Laura! I am planning my shopping list for this recipe as I am writing. Let me ask where do you buy cheese cloth or nut milk bag? It might be a silly question to ask but I am such a newbie. Also can you use just about any nuts you like to make nut milk following those measurements? I like that you added dates to sweeten it a bit. This is my kind of thinking Laura.
