Crock Pot Chopped Veggie Quinoa Soup

So, I was standing my kitchen the other day and going through my fridge.  With all this cold weather we have been having,  I was craving soup big time.  I didn’t want to stand by the oven and make it.  I wanted it to be easy!  So, I created this awesome crock pot vegetable soup.  I threw in some quinoa for a little added protein. The results were awesome!!  Seriously, bookmark, pin it, print and make this one!

2 14.5oz cans of diced tomatoes (dump these right into the crock pot there is no need to drain them)

1 6oz can of tomato paste

1 red pepper chopped

1 yellow pepper chopped

1 zucchini chopped

1 small onion chopped

3-4 carrots  chopped

2-3 cups of spinach (2 cups if it’s frozen 3 if it’s fresh and loosely packed)

6 cups of vegetable broth/stock

1/2 cup uncooked quinoa

1/2 cup frozen corn

1TBL garlic powder

1TBL oregano

1/4tsp cayenne pepper

1/4tsp black pepper

salt to taste

Directions

Place carrots, zucchini and onion in a food processor and pulse a few times so that the veggies are still a bit chunky.  Add the mixture to your crock pot.

Add spinach to food processor and process a few seconds to get the spinach chopped.  You could also try using frozen spinach if you don’t have fresh on hand. Add spinach and all remaining ingredients to a large crock pot.  If your spinach is frozen you can skip this step.

Cook on high 3-4 hours or low 6-8.  THAT’S IT!!

Enjoy!  You can freeze this too, but it will be gone very quickly!!

  6. This is my new favorite soup recipe! So delicious! I browned the onion and some fresh garlic in a pan before adding it to the crockpot. (I know it defeats the purpose of a quick meal, but I figured why not.) 🙂 Also, I used fresh tomatoes and a full cup of corn. I love this soup!
