Happy Saturday!!! I just cranked out a 7 mile treadmill run!! Woo hoo for me!! I had all intentions of doing 6 miles but I felt so great that I kept going! Finished in 57:43! Feeling pretty proud right now!

I promised you guys my crock pot chicken taco bowl recipe, so here’s the fast and easy recipe for all of you.
3-4 boneless skinless breasts
1 14oz can chopped tomatoes (you can also use salsa but watch out for salsa that is loaded with preservatives and ingredients you can’t pronounce)
1 can of diced mild green chiles
1 15oz can of black beans (rinsed and drained)
3TBS of taco seasoning. I used this recipe from the Gracious Pantry
1/2 cup of organic frozen corn
Throw everything in the crock pot except the corn
Cook on low for 8 hours
Add corn at the end and shred the chicken with two forks
Serve over brown rice or quinoa and top with the fixings!
I like cilantro, tomatoes, greek yogurt and avocado.
