Bison Taco Bowls

I know I know, you probably feel like I have been teasing you with this one.  Bison tacos are a favorite in my house.  If you missed my post last week on the health benefits to bison check it out here.  If you prefer actual tacos, then just add some tortillas to this recipe.  The hubs always prefers to eat dinner out of bowls because he says it’s “less mess and less clean up”

1lb ground bison

1 red bell pepper chopped

1 yellow bell pepper chopped

1 small onion chopped

1 can of black beans rinsed and drained

3 tablespoons of taco seasoning.  I use this recipe from the Gracious Pantry.

1/4 cup of stock (whatever you have on hand is fine)

Dice peppers and onions

I always use my mini prep to chop an onion because I have that onion tearing issue!

IMG_2895Break up and brown the meat over a medium high skillet

IMG_2896Once meat is browned move over to one side of the skillet and add peppers and onions and sauté for approximately 4-5 minutes over medium high heat.

IMG_2898Add in 1/4 cup of stock and taco seasoning and mix together.  Simmer 2-3 additional minutes until stock is absorbed.

IMG_2899Add in black beans and give everything a final stir.

Building your bowl!

So, I make either brown rice or quinoa as my base.  Then add your taco mix.

Toppings are endless!  I like to add greek yogurt (tastes just like sour cream,) cilantro, avocado, lettuce and some nutritional yeast.  My daughter and husband like to top theirs with cheese! The options are endless
