April Coffee Date!!

Happy Friday Everyone!!

I didn’t really plan to disappear for the last week but Spring Break called and hanging with my family was the priority.  I’ll admit there were a couple of nights that I sat down with my computer after the kids were in bed and I thought about blogging but I decided that rest and relaxation took priority!  So, since it’s April I am linking up a little early for tomorrows Ultimate Coffee Date!


If we were having coffee I would tell you that we had pretty good weather this week!  Including one 70 degree day.  Let’s just say that we spent the day outside!! Parks, playdates, walks and more!  It was wonderful!!  I can’t wait for this spring weather to be a normal daily occurrence.  Unfortunately, it’s quite cold today!  However, I am glad we got to enjoy it!!


If were were having coffee I would tell you that B hit 2 months last Saturday.  How on earth did that happen?  I’ll bring you all up to speed with a two month update next week!


If  we were having coffee I would tell you that I have really joined the 5am workout club again!  Right now B wakes up around 4:45 to eat.  I’ve been feeding him, pumping and then hitting my basement.  I’m running 3-5 days a week and back to doing Tabata Bootcamp! It’s amazing how much I get done before 7am!  This also means that my eyes can barely stay open past 9pm!

If we were having coffee I would tell you that tonight is Passover and I am hosting!  Just some family and friends and certainly I’m thankful for my mom who is helping out big time!

If we were having coffee I would tell you that the little guy is sleeping right now… but I won’t get into it much more as I don’t like to talk about his good sleeping habits too much since I know they can change in an instant.  I’m even standing up as a I write this because I know that the second I sit down he will wake up from his nap!

If we were having coffee I would tell you that I can’t believe it’s April… I’m going back to work May 1 and while I am looking forward to it I am a bit nervous about getting into another new routine.  Thankfully, the Hubs is taking off the final month of school so he will be home with him.  I don’t have to worry about the daycare routine until summer is over!

If we were having coffee I would tell you that we are back to researching and thinking about a new car.  The Hubs is all for a minivan… me, not so much!  It’s just so much car and I don’t think we need it but we do need a third row.  So we are looking at 3rd row crossover cars.  I’ve always bought car but we are thinking about a lease this time around and then in a few years if we think the car isn’t big enough for us we might make the minivan jump!

If were having coffee I would tell you that So Delicious has come out with THE MOST amazing dairy free ice cream!  It’s cashew ice cream and it seriously tastes like the real dairy deal!  Non dairy ice cream can be hit or miss but this stuff is INSANE!!  We’ve all been enjoying ice cream after dinner!!


If we were having coffee I would tell you that I still have to pinch myself everyday to realize how lucky we are with our little miracle.  Everyday is always the best day… Sara is so in love with her little brother and we are so incredibly happy as a family of four!  It took years to get to this point but it was SO worth it!


 So what would you tell me?

  4. Cashew ice cream!? OMG must try this! Danger I am sure I can eat the whole thing! The cashew yogurt from Kitchfix is amazing.

    I swore I would NEVER drive a minivan but when the boys were both little we bought one. Not gonna lie – it was awesome for awhile. I changed them inside of it many times!! We had 2 captain seats for the middle row and it was easy to have them stand and change when they were young (after swim lessons…..). We got rid of it when they were older but it was great for those early years!

      I know Kim– I just don’t want it– we will have to see what the future holds– I love my CRV but it Sara wants to have a friend over it’s not cutting it for carpools and playdates

  7. oh wow! what a beautiful pic of the kids! congrats on getting up early and getting it done! I am with you- a lot can be done before 7 am! and I am generally in bed no later than 10 but I do doze during whatever show my hubby has on at 9 🙂 I hate shopping for new cars, to many decisions- good luck! and have a great Easter weekend!

  10. Laura, such a great pic of the baby! So darn cute. I am not a mini van mom at all, but a suburban is great only the gas is pricey. I love the room for all the kids and their sports equipment and friends. I have not heard of that ice cream, I assume I can find it at Whole Foods? Have a wonderful Easter with your beautiful family and thank you for coffee 🙂

  11. I had a minivan when the boys were little and as much as I didn’t want to go that route, it was awesome. We took a lot of road trips in the van as well. But when it was time for a new car, I went back to a Jeep…what can I say?
