It’s FRIDAY!  YEAH!  I’ve got my race this weekend and I PUMPED up!

Wanted to tell you about some products that I have been LOVING lately!!

First up, I bought this at Whole Foods a few weeks ago and have been loving it!  It’s a Chia Flax seed blend with a little coco powder and coconut!  It’s been amazing on greek yogurt and on top of fresh fruit!  SOOO yummy!

Next, I found this at TJ MAXX of all places and boy was I pumped!  This caramel sauce has three ingredients!  Dates, organic caramel extract and sea salt.  It’s SOOO sweet and is the perfect answer for a healthy and clean caramel sauce!  I told a friend of mine who is vegan she ran out that day to get some!

Moving on, I bought about $40 worth of spice rubs and mixes at this awesome little store while I was in Key West last week.  This Florida Sunshine is a sea salt mixture with orange, lemon and lime zest and other amazing flavors.  I’ve added it to beer, per suggestion from the store manager, put it on top of my grilled veggies and chicken and it’s AMAZING!  I’m not one to really salt food but just a simple dash of this stuff makes a whole world of a difference.

Fourth on my list is the Pacific Beach Peanut Butter Company. A few weeks ago they sent me three of their jars of peanut butter to try!  OMG!  AMAZING!!    You all know how much I love peanut butter! (Insert ooh’s and ahh’s here!)  Anyways, I am very excited and don’t even know where to start!  Who has some good tips or recipes to share?  I’ve been wanting a Vitamix for awhile and well my blender kind of wasn’t doing so well, so I upgraded!   I’m so excited and spent last night looking through the great recipe book that came with it!   Does anyone else have one?

I’m resting up till Sunday’s race!  Weather is looking perfect!  A low of 49 and a high of 64 with partly sunny skies!!  I can’t wait!

Chocolate Peanut Butter Puffin Balls

Awhile ago the great folks at Kid Kritics contacted me about creating a healthy  recipe using one of their featured products.  Kid Kritics is a great site that focuses on healthy eating for kids!  What makes something Kid Kritics approved?

  • No bad fats (i.e. hydrogenated oils, trans-fats)
  • No artificial additives (i.e. MSG, aspartame, dyes)
  • No corn syrups
  • Little to no caffeine
  • No lab-sourced (synthetic lab-made) ingredients
  • Acceptable amounts of naturally-sourced sugar
  • Acceptable amounts of naturally-sourced sodium
  • Source is natural – grows out of the ground, walks the earth, swims in water, flies in the air (i.e. sugar from sugar cane)
  • Original nutrients not seriously diminished or eliminated in food processing (i.e. whole grains versus flour stripped of nutrients and bleached)

I was sent a couple boxes of Honey Rice Puffins which is from Barbara’s Bakery.

Sara and I immediately busted open a box to sample the cereal and boy was it tasty!!  I spent a couple of days thinking about a healthy snack/dessert that I could make with this and over the weekend got to creating!  The end result were these yummy Chocolate Peanut Butter Puffin Balls.

Chocolate Peanut Butter Puffin Balls

Serves: 12-15 balls
 
A great healthy and protein packed snack for anyone!
Ingredients
  • 2 cups of Puffins Cereal
  • ½ cup of natural peanut butter
  • ¼ cup of honey
  • 2T of unsweetened coco powder
  • 1T of Milk ( I used unsweetened almond milk)
Instructions
  1. Crush your cereal in a bag by hand or in your food processor.
  2. Place cereal in a large bowl.
  3. Combine peanut butter and honey and melt together over low heat on your stove.
  4. One peanut butter and honey are combined add in 2T of unsweetened coco powder and the milk.
  5. Combine your wet ingredients into dry ingredients and mix until everything in combined.
  6. Store in an airtight container in your fridge.

Store in your fridge and enjoy!  These are great for anyone… not just kids!  Just ask the Hubs he polished off quite a few of them until Sara caught him and asked that he save some for her!

 

 

WIAW and Other Random Thoughts!

Happy WIAW!  This is the last one of the month!  Seriously how is going to be June next month?  Sara turns 4 in less than 2 weeks!  WHAT?!?!  We went to order her birthday cake yesterday!  Where has the time gone!?!?

Is it me or do short weeks just feel a bit harder and crazier?  Don’t get me wrong I love a nice weekend but this week is just insane!  I’ve got clients to train 3 nights this week and am starting a brand new exercise class on Thursday afternoon!  More on that later!

I ran 4 miles yesterday.  I’m tapering a bit this week for my 1/2 marathon on Sunday.  I love taper week!  Do you guys enjoy it?  It was a humid and cloudy day but it never really rained during the day!  Unfortunately it poured Monday into Tuesday which meant we couldn’t really play at the park!

Coach’s Oats, topped with cacao nibs and almond butter with a side of berries and coffee! I added a spoonful of the coconut and coco chia flax blend!  It’s so delish!

Snack time was at the YMCA while Sara took art class!  Time for another Quest bar!  Seriously, these bars are AMAZING!

Sara enjoyed lunch outside and I had a quinoa salad and topped with fresh cilantro from the garden!  My herbs are doing so well!!!

We spent a couple of hours outside riding bikes, blowing bubbles and chalking up our driveway before we headed out for gymnastics.  I cut up a pineapple before we left and Sara and I both snacked on some amazing and juicy pineapple before she went into class!Image copy 3

It was supposed to be a very rainy afternoon so I had planned to cook dinner in!  I used one of the spice rubs that I bought in Key West with some coconut milk and chicken!  Yum!  I roasted some frozen Trader Joes brussels sprouts.  They were good but not nearly the same as fresh ones!

Trained a client at the house immediately following and early dinner and then got Sara to bed!

Sat down and had dessert!  I made these brownie batter fudgesicles on Monday and OMG are they INSANE!  Had to restrain myself from having another one!  Not sure I am going to share these!

Does anyone else feel like short weeks are much harder?  I’m so thrown off but the good news is that week is 1/2 over!

 

 

Another Race Week is Here and Weekend Highlights

I took the day off yesterday from blogging for the holiday! For those of you who celebrated Memorial Day, I hope you had a great day!  I played catch up this weekend after being gone last week!

First up on Saturday after my run and training my client was operation fill the fridge!

I ended up with an average pace of 7:34 over the 12 miles!  I’m hoping to fly like this on Sunday!

We did a major Costco food run and then I headed to one of my produce stores to stock up on fruits and veggies!  Before I started shopping I went to the juice bar and did my first shot of wheatgrass!  Has anyone ever had one?  It tastes like weeds but it wasn’t terrible.  It wasn’t good either though!

Our weather this weekend wasn’t great.  It wasn’t horrible either but it is supposed to warm up again this week!

I also had my first Quest bar over the weekend and boy is that stuff amazing!  It definitely lived up to the hype!

I melted mine in the microwave for a bit since I hear eating it warm makes it taste like a warm chocolate chip cookie.  I may have over cooked it a bit but it still tasted like heaven!

I caught up on sleep big time this weekend.  Even though I was getting around 7 hours a night on the cruise the exhaustion hit me big time on Sunday!  After over 9 hours of sleep on Sunday night I woke up Monday feeling amazing!

My 5 mile run was amazing even though it was a bit windy and I ended with a 7:18 pace!  I was pretty pumped!

Afterwards, we bundled up and headed out to the Memorial Day Parade!

We BBQed indoor with friends and despite it NOT feeling like the unofficial kick off to summer we had a blast!

The Hubs has 7 more days of school and then we ALL start to feel the effects of summer break.  My schedule doesn’t change.  In fact I know it will get a lot busier but we all won’t be running around at 5:15 am M-F like crazy people trying to get ready for the day!

Sunday will be the 5th time I am running the North Shore 1/2 Marathon.  This is my FAVORITE 1/2 marathon to run.  For starters, it doesn’t involve driving to the city and dealing with city parking and crowds.  It’s a great and beautiful suburban 1/2 marathon that isn’t jam-packed with thousands of runners!

I got my race number last week and found out that I have placed in Corral A!  That’s a first for me!  Usually I am in B or C but I guess given my recent speeds this makes sense!  So far the weather is looking GOOD with no rain and mild temps!

I’m back! Dairy Detox OVER! LOTS of WINNERS and MORE!!

I had a great week away and it was an awesome trip!  Doing our yearly spring trip is truly one of the highlights of my job.  In case you missed my post last week, I get the chance to take a group of adults with special needs on a vacation every year.  We’ve been to some incredible places over the years but our cruise last week was truly the best trip we have ever taken!

I broke the diary free detox while I was gone.  I had no intension of keeping it up while I was away.  I was in Key West, Florida on Thursday.  One of ultimate favorite desserts is key lime pie, so why one earth would I deprive myself of key lime pie while I am in Key West?  Would you?

It was seriously amazing and worth every single bite.  I did my best to keep the dairy low but I indulged in some desserts.  No sweat though, I will go dairy free again in a bit.  My tummy wasn’t loving me with all the dairy consumption but I’m thinking I will bring back some Greek yogurt this week as I have really missed it!  I never had intentions of giving up dairy forever but I drastically cut dairy down and I can live without it!  It was a great little “challenge.”

I got these Quest bars in the mail a few weeks ago and have been holding off on them until I brought dairy back!  I’m excited to try them because I hear they are AMAZING!  Have you had them?

When you travel do you exercise?  I generally always pack clothes and gym shoes.  One of the best parts of running is that you don’t ever need a gym to do so.  Well, when you are on a ship it’s a bit harder.  However, I did get myself up to the gym every morning to run on the treadmill. I was gone for 4 nights and had 3 mornings of good runs!  There was a running deck on the ship but it didn’t open till 9am, so hitting the treadmill was my best bet!  I missed my Tabata Boot camp though!!  I’ll get back to that this week

Speaking of this week, I have a ½ marathon coming up on Sunday!  That snuck up really fast on me!  I’ll be watching the weather this week and obsessing over it as I usually do!  I need to get going because I have 12 miles to do this morning but we have LOTS of winners from last week!!
